Limiting article display

I am brand new to Txp and would love to know how to accomplish the following:

1) only one article displayed at once rather than the entire series of articles

2) limit aricle display by section and category; what would be nice here is a bulletted list of articles that a user can choose from, with article excerpts.

3) removing the home link from the menu

I am not that skilled in xml but can learn quickly.
In my install I have both sections and categories set up but when the articles link is hit you get everything.

How I would like the page to work is
>Section >categories in section

in the display when I click a category i get article one description date article two “ “
etc
when you click the category link at the bottom of an article that is the kind of display I would like when you enter from the menu, but with the addition of the excerpts
