Converting from latin1 to utf-8 can be tricky, it’s not really something for beginners. But, you can try if you want to, just make sure you don’t modify the original database or the backup for it (always work on a copy of the db dump). Some relevant links:

Thanks! I’ll let folks know how it works, although possibly after Christmas, it’s crazy at our house now!

I had thought of iconv of my dumps, but I was concerned that MySql might want ASCII or some such for the MySql parts, requiring a fairly sophisticated script to apply iconv only to the content of the dump.
