I am trying to figure out what would be the best way to build a simple gallery using images categories section.

Take a look at Example2 on the docs page of txp:images. That should do pretty much what you want.

First, you need to create the categories on the categories pane (tip: make sure you are creating image categories) and then assign your images to the respective categories.
