An 11 year old ExpressionEngine site to TXP : mySQL problem

Hello, when I export the ExpressionEngine database, in the text fields, the special characters are coded thus:

UN RÊVE QUI SE CONCRÉTISE

I tried to export in utf-8 or in iso with the same result.
Do you have a solution ? A function that allows to transform the coding utf-8 on 2 characters in a correct accented coding?

So far, I only see a search / replace with a text editor …

Note : I upgrade the ExpressionEngine site to a Textpattern site …
