This is the same as creating an archive – see FAQ

A good plugin is rss_suparchive

Create two sections, Course1 and Course2. Create two categories, Discussion and Assignment. I would use Category 1 for each Discussion article and Category 2 for each Assignment article. This will help sort the articles
