mem_self_register how to define privileges

I have just started using mem_self_register plugin. It works and its great, but i have two questions:

First, when a new user is registered their privilege is empty. the administrator has to change that before they can login. Is there a way where the administrator can define once and for all, the privileges of the new users.

Also the email that it is sent from the administrator has a funny address. It looks more like the address of my hosting company. e.g. UNIX :Array@i-194-106-33-237.freedom2surf.net. Is there a way of changing this.
