Jared, don’t bother with MAMP – OS X already has a server built in. Follow this, but don’t uncomment the line about PHP in your httpd.conf – use this pkg.

Jared, if you get fed up with fiddling with the httpd.conf and hosts files, you can always invest in MAMP PRO and you’re done (the hosts pane is shown at the bottom of page 2 of the pdf). Purists may ruffle their noses, mac-fans will rejoice in the simplicity. It works in tiger and leopard out of the box.
If you want to stay with the inbuilt webserver, you might want to try headdress

Jacob is absolutely right. Simplicity is sometimes the key to make room for other complicated stuff. So, if you want to do yourself a favor, just go and get it.
Handle dozens of Testdomains simultanusely, set them up within 4 minutes each and have all your rootfolders, phpadmin and domains neatly accessible from one spot. ( I can only recommend it )
