I’m working on a business directory page for a town website, how do I setup an A To Z of Businesses,
that link to a page with the businesses listed.

Something similar to Directory of Sussex

I will have a look at that,

in the meantime I got Some help from Els post here
using Ruud’s plugin rvm_substr

I edited the plugin to comment out the ellipses like Els suggested,
and have setup a test page here
